A1 Meatloaf Recipe

Meatloaf is a fairly recent addition to my family's meal rotations. Mostly because all the meatloaf we've tried in the past has been loaded down with peppers and onions, and not one of us likes that. Well, one night we decided to try one of the pre-prepared meatloaves that you find in the Publix meat counter. Thankfully, it wasn't overrun with peppers and onions, and became an instant favorite. In recent weeks, those meatloaves haven't been available, and we've been missing that comfort food, so when I saw a recipe for meatloaf on the label of an A1 steak sauce bottle, I decided to try it (with some modifications -- no onion).

I'll admit that I made some mistakes with this recipe. The first being that I didn't get close enough to the 2 lbs. of ground beef it called for, so there ended up being too many bread crumbs in my opinion. Also, when I drained the grease, half of my loaf ended up in the sink. I was able to save most of it, but man was it ugly. That said, both my husband and I enjoyed it. Alexis, on the other hand, wouldn't eat it and said she didn't like the tomato sauce on top. So it was a sort-of victory.

Ingredients
  • 2 lbs. Lean Ground Beef
  • 8 oz. Tomato Sauce
  • 1 cup Bread Crumbs
  • 1/3 cup A1 Steak Sauce
  • 2 Eggs, beaten
  • 1/2 tsp. Black Pepper
Directions
  1. Preheat oven to 350 degrees.
  2. In large bowl, combine ground beef, bread crumbs, steak sauce, pepper, beaten eggs, and half the can of tomato sauce.
  3. Press mixture into 9x5 inch loaf pan.
  4. Bake 50 minutes. Carefully drain any grease/fat. Top with remaining tomato sauce and return to oven for 10 more minutes.
